WarHorse Gaming is a gaming and entertainment division of Ho-Chunk, Inc., developed in partnership with the Nebraska Horsemen’s Benevolent and Protective Association (HBPA). The Culinary Operations Supervisor is responsible for overseeing daily kitchen operations to ensure the highest quality food production, sanitation standards, and team performance. This role supervises culinary staff, coordinates work assignments, supports menu and recipe development, and ensures compliance with all company policies and gaming regulations. The position plays a key leadership role in maintaining operational efficiency, guest satisfaction, and a safe working environment.
Supervise and distribute workload among culinary team members to ensure efficient operations
Provide training, coaching, and performance feedback to culinary staff
Manage team schedules to maintain appropriate staffing levels
Ensure compliance with required training, certifications, and work card requirements
Develop menu items, recipes, and production guides
Collaborate with front-of-house and back-of-house leadership to promote food safety and service excellence
Oversee event and group setup and breakdown, assigning duties as needed
Maintain cleanliness, sanitation, and food safety standards across culinary operations
Ensure compliance with department and company policies, internal controls, and government regulations
Participate in and promote safety meetings and periodic training sessions
Foster positive team member and guest relations
Present a professional appearance at all times
Perform other duties as assigned
Required:
Must be 19 years of age or older
Associate degree in a related field, or equivalent work experience
Eight (8) years of culinary management experience in a large, multi-outlet casino/hotel environment
Five (5) years of experience in a supervisory capacity
Thorough knowledge of food and beverage planning and production procedures
Demonstrated commitment to guest service excellence and ethical conduct

Is this position responsible for selling, serving, or distributing alcoholic beverages or do they have comp authority? No
Gaming License Required? Ability to secure and maintain NE Gaming License.
Other Certifications? Food Handler, ServSafe Certification, TIPS Alcohol Certification and others as required.
